Classic Risotto with Sautéed Mushrooms and Basil Pesto
This risotto was made the classic way. We caramelized onions in olive oil, added the risotto and gave it a little toasting, deglazed with white wine, and gradually added some stock. Ta-da! Then the basil pesto and sautéed mushrooms are thrown in for good measure.
